Behind the Bar: Dora of Houston’s Byzantio Cafe & Bar

Meet Dora Giannakopoulos, bartender and owner of Byzantio Cafe & Bar in Houston, Texas.

When and why did you get into the industry?

I started bartending back in December 2003. I’d describe myself as a real people person. This is the perfect industry for me to be able to show my personality, cultural background and hospitality, while being around people all day long.


Tell me a bit about your bar. What would you tell someone who has never been here before?

It is a Greek restaurant/coffee bar/bar that offers great food and drink specials. It’s a one-stop-shop and home away from home! Be prepared for something different.


What do you love about working behind the bar?

I can be creative, and if someone is by himself, I can make him feel welcome.


What sets HPNOTIQ apart from the rest of the cocktail world?

The color, definitely! It’s also very versatile.


What is your favorite signature HPNOTIQ cocktail?

I like my specialty cocktail – Dora the Explorer.


Tell us about your specialty HPNOTIQ cocktail. What occasion is it perfect for?

“Dora the Explorer” – Hpnotiq, Harmonie, and club soda. Served with a purple rock candy stick. It is perfect for any occasion; Monday Martini night or during the weekend in a shot.


You have probably heard plenty of pick-up lines – what’s the best/worst?

Where do I start? Most of them are not even appropriate for me to repeat!


What advice do you have for someone trying to approach someone at a bar?

Always say what you think. Be honest and don’t give them a staged line!


What is one thing behind the bar that you cannot live without? Why?
