Behind the Bar: Gil Levy of Uni Sushi Restaurant & Bar

Meet Gil Levy of Uni Shushi Market Street in Houston, Texas.


When and why did you get into mixology?

About three years ago; it was something I had been interested in for a while and an opportunity came up.


Tell me a bit about your bar. What would you tell someone who has never been here before?

It’s an upscale, yet fun restaurant. The drinks are good, and thanks to the chefs, I’m a little bit of a sushi snob. They really do great work.


What do you love about working behind the bar?

I get to hang out with people and call it work.


What sets HPNOTIQ apart from the rest of the cocktail world?

It’s naturally festive and it dresses itself up.


What is your favorite signature HPNOTIQ cocktail?

Hpnotiq Roq Coconut. It’s widely popular and pretty, plus you get rock candy with it!


Tell us about your specialty HPNOTIQ cocktail. What occasion is it perfect for?

I call it Harmonie Rush: Hpnotiq Harmonie, Redbull, triple sec, vanilla vodka, citrus vodka and 151. It’s great for kicking off a night of fun with friends.


What’s the best/worst pick-up line that you’ve heard of?

Real swag doesn’t need pickup lines, but if you’re sitting at the bar and an Ecuadorian with a heavy accent asks you  “Do you want to be touched by an angel?” you know your night just got better.


What advice do you have for someone trying to approach someone at a bar?

Just be real, there’s too much nonsense already to be fake with people.


What is one thing behind the bar that you cannot live without and why?

Redbull, it helps me focus =)
